Full ingredients list:
1 teaspoon dried thyme
2 teaspoons ground cumin
1 tablespoon finely grated lemon zest
4 x 125g beef minute steaks
cooking oil spray
400g can no-added-salt chickpeas, rinsed, drained
400g can no-added-salt lentils, rinsed, drained
175g mixed baby tomatoes (tomato medley), chopped
1 continental cucumber, peeled, chopped
1/2 small red onion, thinly sliced
1/4 cup fresh oregano leaves
2 tablespoons Greek dressing
lemon wedges, to serve

Instructions and steps:
Step 1 Combine thyme, cumin and lemon zest in a small bowl. Sprinkle steaks with cumin mixture. Spray a large frying pan with oil and place over a medium-high heat. Cook beef for 30 seconds each side, or until cooked to your liking.
Step 2 Meanwhile, toss chickpeas, lentils, tomatoes, cucumber, onion, oregano and dressing together in a large bowl. Serve steaks with salad and wedges of lemon.
Minute steaks can also be called sizzle steaks, sandwich steaks or plain schnitzels. All of these are healthy, lean beef choices.
