Marinated chilli and garlic zucchini

Full ingredients list:
4 zucchini, thinly sliced
2 tablespoons olive oil
1 long red chilli, deseeded, thinly sliced
1 clove garlic, crushed
2 tablespoons lemon juice
125g buffalo mozzarella, torn into bite-sized pieces
1 preserved lemon rind, rinsed, thinly sliced
2 tablespoons small mint leaves

Instructions and steps:
Step 1 Place a chargrill pan over high heat. Place zucchini into a bowl. Add oil, chilli and garlic. Toss to combine. Remove zucchini from oil and grill for 2–3 minutes on each side, or until tender.
Step 2 Meanwhile, add lemon juice to leftover oil mixture. Arrange zucchini on a serving platter. Top with mozzarella, lemon rind, oil mixture and mint.
