Spiced fruit with vanilla custard

100ml low-fat cream
200ml skim milk
3 egg yolks
2 tablespoons caster sugar
2 teaspoons vanilla bean paste
1 tablespoon gluten-free cornflour
1 cup Spiced fruit
2 tablespoons flaked almonds, to serve

Instructions and steps:
Step 1 Combine cream and milk in a small saucepan. Bring to a simmer then remove from heat.
Step 2 Whisk egg yolks, caster sugar, vanilla bean paste and cornflour together. Pour milk and cream onto egg mixture, whisking to combine. Pour mixture back into saucepan. Cook custard, whisking constantly over medium heat, until thickened slightly. Remove from heat.
Step 3 Divide Spiced fruit between four bowls. Pour 1/4 of the custard over each and top with flaked almonds to serve.
