Step 1 Bring stock, 1 1/2 cups water, oil, ginger, garlic, turmeric, cinnamon and cumin to the boil in a large saucepan. Stir in couscous. Remove from heat.
Step 2 Scatter raisins over, cover, and let stand for about 10 minutes until couscous softens. Fluff couscous with fork, breaking up any lumps. Transfer to a large bowl. Add cucumber, capsicum, carrot, beans and lemon zest and combine.
Step 3 Add lemon juice to couscous and toss to coat. Season with ground black pepper to serve.
