- 2 slices wholemeal bread (see tip)
- 60g (1/4 cup) fresh low-fat ricotta
- 60g (1/4 cup) semi-dried tomatoes, not in oil, drained, sliced
- 25g baby spinach leaves
- 200g tub natural low-fat yoghurt, on the side

Instructions and steps:
Step 1 Spread one slice of bread with ricotta. Top with tomatoes and spinach. Top with other slice of bread. Toast in a sandwich press until golden, then serve. Enjoy your yoghurt as dessert.
Bring two slices of grainy bread and a yoghurt from home.
