Step 1 Combine mince, garlic, lemon zest and oregano in a large bowl. Using damp hands, mix to combine. Using 1/4 cup mixture at a time, roll into 8 balls. Flatten slightly. Place patties on a plate.
Step 2 Heat a barbecue plate or chargrill over medium heat. Spray patties with oil. Cook, turning occasionally, for 12–15 minutes, or until cooked through. Cook bread and zucchini for 2–3 minutes each side or until browned.
Step 3 Meanwhile, place bulgur into a small bowl and cover with hot water. Stand for about 10 minutes, or until bulgur softens. Drain and squeeze out excess liquid. Place bulgur into a large bowl with parsley, tomato, onion, mint, lemon juice and oil. Stir to combine. Serve patties with tabouli, hommous and bread.
