Full ingredients list:
- 6 long red chillies, deseeded and sliced
- 2 thumb-sized pieces of ginger, roughly chopped
- 12 cloves garlic, peeled
- 2 tablespoons Chinese five-spice
- 2 tablespoons canola oil
- 2 teaspoons brown sugar

Instructions and steps:
Step 1 Combine chillies, ginger, garlic and five spice in a small food processor and blend until finely chopped. Add just enough water to bring the mixture to a paste.
Step 2 Place a heavy-based, non-stick frying pan over medium heat. Add oil, then paste. Cook until the paste changes colour and is fragrant. Add sugar. Cook, stirring, until dissolved. Remove pan from heat. Scrape paste into a small container and allow to cool. Refrigerate and use as necessary.
