Stir-fried pak choy and shiitake mushrooms

- cooking oil spray
- 6 cloves garlic, thinly sliced
- 300g shiitake mushrooms, sliced
- 4 bunches baby pak choy, trimmed
- 2 tablespoons reduced-salt soy sauce
- 2 tablespoons mirin

Instructions and steps:
Step 1 Place a large wok over high heat and spray with oil. Add garlic and mushrooms and stir-fry for 2 minutes, or until mushrooms are golden. Add pak choy, stir-fry for a further 2 minutes, or until pak choy is bright green and tender-crisp.
Step 2 Drizzle with soy and mirin to serve. This side dish would work well alongside grilled steaks and mashed sweet potato.
