Full ingredients list:
- cooking oil spray
- 1 onion, diced
- 1 red chilli, halved, deseeded and finely sliced
- 1/2 teaspoon ground turmeric
- 350g long-grain rice
- 600ml reduced-salt chicken stock
- 1 orange, juiced
- freshly ground black pepper
- 100g sultanas
- 1 tablespoon pistachios, chopped
- micro herbs, to serve

Instructions and steps:
Step 1 Spray a large frying pan with oil and place over medium-high heat. Add onion and cook for a few minutes until softened. Add chilli and turmeric and cook for about a minute. Stir in rice and coat with onion and chilli.
Step 2 Add stock, orange juice, pepper and sultanas. Bring to the boil and reduce heat to a simmer.
Step 3 Cover and allow to simmer for 20 minutes, or until liquid is absorbed and rice is tender. When rice is cooked, fluff with a fork. Sprinkle with pistachios and micro herbs to serve.
