Step 1 Combine soy, tomato paste, honey and ginger in a shallow non-metallic container. Add pork, stir to coat, cover and set aside in refrigerator to marinate for at least 1 hour.
Step 2 Preheat oven to 180°C. Place a large frying pan over high heat and spray with oil. Cook pork for 1 minute each side, or until browned all over. Transfer pork into a roasting pan with a wire rack. Roast for 15–20 minutes, brushing once or twice with remaining marinade, or until golden and cooked to your liking. Remove, cover loosely with foil and set aside to rest for 2–3 minutes.
Step 3 Meanwhile, blanch snow peas, sugar snap peas and broccolini in a large saucepan of boiling water for about 2 minutes, or until bright green and tender-crisp. Drain well then return to saucepan. Add sesame oil and sesame seeds. Toss to combine.
Step 4 Slice pork into 1cm-thick slices. Divide rice, pork and vegetables between 4 plates to serve.
