Full ingredients list:
- 650g washed mashing potatoes (such as cream delight), chopped, skins on
- small pinch saffron threads
- 250g low-fat ricotta
- 2 tablespoons finely chopped chives

Instructions and steps:
Step 1 Cook potatoes and saffron in a saucepan of boiling water for 12 minutes, or until tender. Drain, then return to pan.
Step 2 Add ricotta and mash with potatoes until almost smooth. Stir through chives. Season with black pepper.
Try enjoying this tasty side with pan-fried white fish and a mixed salad.
