Full ingredients list:
- 2 cups tri-colour spiral pasta
- 1 red capsicum, diced
- 1 cup frozen peas
- 1/2 cup frozen corn kernels
- 2 tablespoons olive oil
- 1 teaspoon mustard
- 3 teaspoons lemon juice
- fresh parsley, to serve

Instructions and steps:
Step 1 Cook pasta in a saucepan of boiling water, following packet directions, adding capsicum, peas and corn in the last 2 minutes of cooking time. Remove and drain. Place pasta and vegetables into a large salad bowl.
Step 2 To make dressing combine oil, mustard, lemon juice and some freshly ground black pepper in a glass jar and shake well.
Step 3 Pour a small amount of the dressing over salad to coat so flavours develop. Refrigerate. When ready to serve, pour remainder of dressing over salad and sprinkle with fresh parsley.
