Step 1 Using your hands, combine all kofta ingredients together in a bowl. Divide into 8, then form into oval balls. Thread onto metal skewers and spray with oil. Keep chilled in the fridge while you prepare other ingredients.
Step 2 Cook couscous according to packet instructions, then combine with tomato, cucumber, green onions, dates and chutney.
Step 3 To make the sauce, place a saucepan over medium-high heat and spray with oil. Add onion and paste and cook for 1–2 minutes. Add coconut milk and bring to boil. Reduce heat and simmer for 6–7 minutes. Transfer sauce to a blender and process until smooth. Return to pan.
Step 4 To cook koftas, place a frying pan over medium–high heat and spray with oil. Cook, turning, for 10–12 minutes, or until cooked through. Serve on couscous and top with curry sauce.
