Full ingredients list:
- 150g store-bought falafel mix
- 2 cups frozen mixed vegetables, defrosted
- 4 tomatoes, roughly chopped
- 1 teaspoon harissa paste
- 2 tablespoons chopped fresh coriander
- 4 cups salad greens
- 4 wholegrain pita pockets, split
- 4 tablespoons light hommous

Instructions and steps:
Step 1 Prepare falafel following packet instructions. Mix in vegetables, then shape into 4 patties.
Step 2 Spray a frying pan with a little oil, place over medium-high heat and fry patties until cooked.
Step 3 To make salsa, combine tomatoes, harissa and coriander in a small bowl and mix well.
Step 4 Top 4 pita pieces with hommous, a falafel pattie, salad, salsa and another pita piece.
For meat eaters, replace the falafel with a piece of grilled lamb. Serve with a dollop of tzatziki.
Find harissa paste in specialty or health food stores.
