Honey and orange roasted pumpkin

- 800g pumpkin, skin on, cut into 1.5cm-thick wedges
- cooking oil spray
- 1/4 cup orange juice
- 1 1/2 tablespoons honey
- fresh oregano, to garnish

Instructions and steps:
Step 1 Preheat oven to 180°C and line a large baking tray with baking paper. Place pumpkin onto prepared tray, spray lightly with oil and season with freshly ground black pepper. Roast for 25 minutes.
Step 2 Meanwhile, place a small saucepan over medium-high heat and add orange juice and honey to pan. Bring to the boil, then reduce heat and simmer for five minutes, or until reduced by half. Remove pumpkin from oven and drizzle honey mixture over pumpkin to coat. Return to oven for a further 10 minutes, or until pumpkin is golden and caramelised. Garnish with fresh oregano to serve. Great with roast lamb or chicken.
