600g roasting potatoes (eg. coliban or golden delight), peeled, cut into large chunks
cooking oil spray
freshly ground black pepper
mixed fresh herbs, to season

Instructions and steps:
Step 1 Preheat oven to 180°C. Cook potatoes in a saucepan of boiling water for 12 minutes, or until almost tender. Drain well. Return potatoes to saucepan over high heat, and shake in pan until any excess water has evaporated and potatoes are slightly rough around the edges.
Step 2 Transfer potatoes onto a large baking tray lined with baking paper and spray with oil. Roast for 45–50 minutes, turning once during cooking, or until potatoes are crisp and golden. Season with freshly ground black pepper and mixed herbs to serve. Try serving with roast chicken and green vegies.
