Sweet potato fritters with zesty tuna topping

Full ingredients list:
- 600g sweet potato, peeled, coarsely grated
- 3 eggs, lightly beaten
- 1/3 cup plain flour
- 2 tablespoons chopped flat-leaf parsley
- cooking oil spray
- 3 x 180g cans tuna in spring water, drained, flaked
- 2 tablespoons finely diced onion
- 2 teaspoons lemon zest
- 2 bunches asparagus, trimmed, steamed

Instructions and steps:
Step 1 Combine sweet potato, egg, flour and parsley in a large bowl. Season with ground black pepper. Spray a large frying pan with oil and place over medium heat. Pour 1/3 cupfuls of mixture into pan (in batches) and cook 3 minutes on each side, or until golden and cooked through. Keep warm.
Step 2 Meanwhile, combine tuna, onion and lemon zest in a bowl. Spoon tuna over fritters and serve with steamed asparagus.
