Full ingredients list:
- 200g hot smoked salmon (thick portion), cut into chunks
- 16 cherry tomatoes
- 1 red onion, cut into wedges
- 12 button mushrooms
- 2 yellow capsicums
- 400g can chickpeas, rinsed
- 3 tablespoons olive oil
- 2 cloves garlic, crushed
- 2 teaspoons curry paste
- 1 lemon, juiced
- 4 light wholemeal pita breads, warmed, sliced into ‘sticks’

Instructions and steps:
Step 1 Thread salmon onto 4 skewers, alternating with tomatoes, onion, mushrooms, and 1 capsicum cut into chunks.
Step 2 Place chickpeas into a blender with oil, garlic, curry paste and lemon juice. Blend until smooth. Spoon into a bowl.
Step 3 Serve skewers with dip, pita ‘sticks’ and remaining capsicum, cut into sticks.
You can vary the skewers in dozens of ways. Try chunks of seared tuna, cooked chicken breast, grilled zucchini, baby corn or roasted eggplant.
This recipe is not suitable for those following a no-added-salt diet.
