Full ingredients list:
- 2 medium onions, cut into thin wedges
- 400g sweet potato, peeled, cubed
- cooking oil spray
- 500g cherry tomatoes, halved
- 400g spiral pasta
- 2 bunches asparagus, trimmed, cut into 4cm lengths
- 1/4 cup lemon juice
- 1/4 cup chopped flat-leaf parsley

Instructions and steps:
Step 1 Preheat oven to 200°C. Line a baking tray with baking paper. Place onion and sweet potato on tray and spray with oil. Bake for 45 minutes, or until tender and golden. Add tomatoes for last 15 minutes of cooking time.
Step 2 Meanwhile, cook pasta according to packet instructions. Add asparagus for last 2 minutes of cooking time. Drain and return to saucepan. Stir through roasted vegetables, lemon juice and parsley. Season with ground black pepper before serving.
