Lemon chicken with parsley

Full ingredients list:
- 600g sweet potato, peeled, cut into cubes
- 2 bunches asparagus, trimmed, halved
- 500g chicken breast fillets, thinly sliced horizontally
- 2 teaspoons grated lemon zest
- 2 cloves garlic, crushed
- 1 tablespoon plain flour
- cooking oil spray
- 1/3 cup lemon juice
- 1/4 cup chopped flat-leaf parsley

Instructions and steps:
Step 1 Steam sweet potato for 10–12 minutes, or until tender. Add asparagus in last 3–4 minutes of steaming. Set aside and keep warm.
Step 2 Meanwhile, rub chicken with lemon zest and garlic. Season with ground black pepper and sift flour over chicken. Spray a large frying pan with oil and place over medium-high heat. Cook chicken, in two batches, for 2–3 minutes on each side, or until cooked through. Return all chicken to pan. Add lemon juice and stir to combine.
Step 3 Sprinkle chicken with parsley and serve with steamed sweet potato and asparagus.
