Step 1 Using clean hands, combine mince, parsley and egg, then form into 4 patties. Place a chargrill pan over high heat. Spray patties and sweet potato slices with oil. Cook patties for 4 minutes on each side, or until cooked through. Cook sweet potato for 3–4 minutes on each side, until tender.
Step 2 Meanwhile, using a vegetable peeler, shave asparagus into long, thin strips. Chop strips into 6cm lengths. Toss asparagus with onion and lemon juice.
Step 3 Spread bottom half of each bread roll with 1 tablespoon wholegrain mustard. Top with sweet potato, patties, asparagus mixture and bread roll top.
