Beef and sweet potato hash browns

Full ingredients list:
- 500g lean beef mince
- 2 teaspoons dried oregano
- 1 large brown onion, very finely chopped or grated
- 400g sweet potato, peeled, coarsely grated
- 1/4 cup plain flour
- 2 eggs, lightly beaten
- cooking oil spray
- 500g cherry tomatoes, halved
- 2 bunches asparagus, steamed
- 1/4 cup chopped flat-leaf parsley

Instructions and steps:
Step 1 Using clean hands, combine mince with oregano and half the onion. Form into 8 small patties, cover and set aside.
Step 2 Combine sweet potato with remaining onion, flour and eggs. Spray a large frying pan with oil and place over medium heat. Pour 1/3 cupfuls of potato mixture into pan (in batches) and cook for 3 minutes on each side, or until golden (makes 8 hash browns total). Keep warm.
Step 3 Spray pan with a little more oil and pan-fry tomatoes and asparagus for a few minutes. Set aside and keep warm.
Step 4 Cook patties for 3 minutes on each side, or until cooked through. Place patties on top of hash browns and sprinkle with parsley. Serve with vegies.
