Step 2 Cook potatoes in a large saucepan of boiling water for about 15 minutes, then drain. Meanwhile, spray a frying pan with oil and cook onion over medium heat until softened. Add potatoes, green beans and tomatoes. Simmer for 5 minutes, or until beans are bright green and tender-crisp.
Step 3 While potato mixture is simmering, grill or pan-fry beef skewers for 3–4 minutes on each side until cooked through. Serve skewers with potato bean mixture.
