Step 1 Preheat oven to 180°C. Line 2 large baking trays with baking paper. Arrange sweet potato chips on one prepared tray and spray with oil. Bake for 15 minutes, or until cooked.
Step 2 Meanwhile, lightly beat egg whites in a shallow bowl with 1 tablespoon water. Place breadcrumbs onto a plate. Dip each piece of fish into egg mixture, then into breadcrumbs. Place onto remaining tray. Spray with oil and bake for 10 minutes, or until fish is golden and cooked through.
Step 3 Meanwhile, combine lemon rind, juice and yoghurt in a small bowl. Serve fish with potatoes, lemon yoghurt, lemon wedges and salad.
