Step 1 Preheat oven to 220°C. Place capsicum and onion onto a baking tray lined with baking paper. Spray with oil and place in oven for 25 minutes.
Step 2 In a bowl, mix mince, mint, feta and chilli until combined. Shape into 8 oval-shaped kofta rolls.
Step 3 Place a non-stick frying pan over medium-high heat, spray with oil, and then cook koftas, turning, until browned on all sides. Place koftas onto another baking tray and cook in oven for 15 minutes, until cooked.
Step 4 Remove capsicum and onion from oven and combine with tomatoes and lime juice.
Step 5 Top toasted pita breads with koftas, rocket and roasted vegie salsa.
