Full ingredients list:
- 1 2/3 cups self-raising flour
- 1/3 cup cocoa powder
- 1/2 teaspoon baking powder
- 1/2 cup caster sugar
- 70g dried pear halves, chopped
- 1/2 cup choc chips
- 2 eggs, beaten
- 1/4 cup rice bran or light olive oil
- 1 cup skim milk

Instructions and steps:
Step 1 Preheat oven to 180°C. Line a 12-hole muffin tray with 12 paper cases.
Step 2 Sift flour, cocoa and baking powder into a mixing bowl. Add sugar, dried pear and choc chips.
Step 3 Whisk egg, oil and milk in a bowl. Stir into flour mixture (do not over mix).
Step 4 Spoon muffin mixture into paper cases until two-thirds full. Bake for 20–25 minutes, until risen and cooked. Test with a skewer to check. Cool muffins in tray for 5 minutes, then cool on wire rack.
