Sesame lamb cutlets with sweet potato mash

Full ingredients list:
- 600g sweet potato, peeled, cut into chunks
- 1/4 cup sesame seeds
- 8 French-cut lamb cutlets
- 4 green onions, trimmed, thinly sliced
- 2 teaspoons grated ginger
- 8 cups steamed snow peas and green beans, to serve

Instructions and steps:
Step 1 Steam sweet potato for 10–15 minutes, or until tender.
Step 2 Meanwhile, place sesame seeds onto a large plate. Firmly press both sides of lamb cutlets into sesame seeds to coat. Spray a large frying pan with oil and place over high heat. Cook cutlets for 2 minutes each side for medium, or until cooked to your liking. Remove from pan and rest.
Step 3 Spray frying pan with a little more oil and place over medium heat. Add onion and ginger. Cook, stirring, for 1–2 minutes. Add to sweet potato and mash roughly with a fork.
Step 4 Divide mash between serving plates and serve with cutlets and steamed greens.
Swap the lamb cutlets for beef or salmon. Add a squeeze of lemon juice to mash and steamed vegies for a low-kJ hit of flavour.
