Full ingredients list:
- 1/4 cup unsalted peanuts
- 2 teaspoons grated ginger
- 1 1/2 tablespoons lime juice
- 1 teaspoon lime zest
- 1 tablespoon reduced-salt soy sauce, plus extra to drizzle
- 500g chicken tenderloins
- 4 cups steamed rice
- 6 cups steamed Asian greens (bok choy, Gai larn, snow peas), to serve

Instructions and steps:
Step 1 Preheat oven to 200°C. Place peanuts into a food processor and pulse until finely chopped. Add ginger, lime juice, zest and soy sauce. Process again to create a paste. Transfer paste to a shallow non-metallic bowl, add chicken and stir to coat. Marinate for 10 minutes.
Step 2 Place chicken on a rack over a foil-lined baking tray. Roast for 10–12 minutes, turning once, until golden and cooked through.
Step 3 Serve chicken with steamed rice and steamed Asian greens. Drizzle with a little extra soy sauce, if desired.
Swap the peanuts for cashews or macadamias. Thin the paste with a little hot water to make a sauce to drizzle over greens.
