- 1 bunch rhubarb (500g trimmed weight), cut into small chunks
- 1/2 cup (75g) soft brown sugar
- 1 teaspoon ground cinnamon
- 3 x 150g tubs vanilla Frûche

Instructions and steps:
Step 1 Preheat oven to 200°C. Place rhubarb into a shallow ovenproof dish in a single layer. Sprinkle with sugar and cinnamon and toss to coat. Cover with foil.
Step 2 Cook for 15 minutes. Remove foil and cook for a further 5 minutes, or until rhubarb is tender and juices are syrupy. Cool for 5 minutes.
Step 3 Mix rhubarb with Frûche and spoon into dessert bowls.
You can cook the rhubarb a day in advance and store, covered, in the fridge.
