Cajun fish tacos with corn salsa

Full ingredients list:
- 420g can no-added-salt corn kernels, rinsed
- 3 Roma tomatoes, diced
- 2 tablespoons chopped coriander
- 2 teaspoons Cajun seasoning
- 500g firm white fish fillets, cut into 2cm dice
- 12 taco shells, warmed
- 4 cups shredded lettuce

Instructions and steps:
Step 1 Place corn, tomatoes and coriander into a bowl, season with black pepper and stir to combine. Set aside.
Step 2 Sprinkle Cajun spice evenly over fish. Spray a large frying pan with oil and place over high heat. Cook fish, in batches, for 2–3 minutes, or until golden and cooked through.
Step 3 Fill warmed taco shells with lettuce, Cajun fish and top with corn salsa. Serve immediately.
Add lime juice, diced avocado or sliced green onions to the corn salsa for extra flavour. Swap the fish for peeled, cooked prawns.
