Pear and almond sponge

Full ingredients list:
- 6 large pears, peeled
- 2 tablespoons sugar
- 1/2 cup golden syrup
- 1 egg
- 1/2 cup plain flour
- 1 teaspoon baking powder
- 1/2 cup almond meal
- 2 tablespoons melted reduced-fat table spread
- cooking oil spray
- 1/4 cup flaked almonds
- 1 1/3 cups low-fat vanilla custard

Instructions and steps:
Step 1 Preheat oven to 180ºC. Remove and discard stems and seeds from pears. Slice into quarters and place into a saucepan. Sprinkle over sugar and add 1 cup water. Cover, bring to the boil, then reduce heat and simmer for 5 minutes. Keep warm.
Step 2 Meanwhile, make sponge: Beat or whisk golden syrup and egg until fluffy.
Step 3 In a separate bowl, sift together flour and baking powder. Stir in almond meal. Fold dry mixture into syrup mixture. Gently stir in melted table spread.
Step 4 Spray a 6 cup-capacity baking dish with oil. Transfer pears (and half the cooking liquid) to baking dish. Pour sponge over pears and scatter with flaked almonds. Bake for 20 minutes. Serve with vanilla custard.
- If pears aren’t in season, try using plums, peaches or apples.
- Boost the flavour by adding 1/2 teaspoon ginger or mixed spice to dry ingredients.
- Swap the almonds for chopped walnuts or pecans.
For an extra treat, add a scoop of low-fat vanilla ice-cream.
