Step 1 Preheat oven to 180°C. Spray a large casserole dish with oil and set aside.
Step 2 Steam sweet potato until soft (about 5–8 minutes). Mash, then set aside and keep warm.
Step 3 Spray a large saucepan with oil and place over medium-high heat. Add garlic and mince. Brown mince, breaking up with a wooden spoon. Stir through passata, then remove from heat.
Step 4 Place 1 wrap in the bottom of casserole dish. Spread half the mince mixture over wrap, top with half the mash, then half the carrot. Place other wrap over carrot. Spread all of the cottage cheese over wrap, then repeat layers with remaining mince, mash and carrot. Sprinkle parmesan evenly over carrot.
Step 5 Bake for 15 minutes. Garnish with chopped parsley, if desired, and serve with salad.
