Full ingredients list:
- 50g reduced-fat table spread
- 1/3 cup caster sugar
- 1 teaspoon lime zest
- 2 eggs, separated, plus 1 extra egg white
- 1/3 cup self-raising flour
- 2/3 cup skim milk
- 1/3 cup fresh passionfruit pulp (about 3 passionfruit)
- 2 teaspoons icing sugar, to dust

Instructions and steps:
Step 1 Preheat oven to 140°C. Lightly spray 4 x 1/2 cup-capacity ramekins with oil and place on a large baking tray.
Step 2 Place table spread, sugar and lime zest into a medium size mixing bowl; beat with electric beaters until light and creamy. Add egg yolks one at a time, beating well after each addition. Fold in flour, milk and passionfruit pulp alternatively.
Step 3 In a separate bowl, beat egg whites with an electric beater until soft peaks form. Gently fold egg whites into the passionfruit mixture. Divide mixture between ramekins and bake for 20–25 minutes, until golden, puffed and set. Serve warm, dusted with icing sugar.
Drizzle with low-fat custard and serve with berries.
