Full ingredients list:
- 250g dried green or brown lentils
- 2 sprigs fresh rosemary or thyme
- 1 stalk celery, finely sliced
- 2 cloves garlic, crushed
- 100g green beans, halved
- 100g snow peas, halved
- 4 green onions, thinly sliced
- 400g cherry tomatoes
- 4 tablespoons olive oil
- 6 tablespoons balsamic vinegar

Instructions and steps:
Step 1 Place lentils into a saucepan with rosemary, celery and garlic. Pour over 4 cups water and bring to the boil. Simmer for 15–20 minutes, until tender.
Step 2 Meanwhile, blanch green beans and snow peas in boiling water for 1 minute. Plunge into a bowl of cold water. Drain.
Step 3 Drain lentils and place into a large bowl, removing rosemary sprigs. Set aside to cool.
Step 4 Add beans, snow peas, onion and tomatoes and combine.
Step 5 Combine oil and vinegar; drizzle over salad. Toss lightly and season to taste before serving.
