Full ingredients list:
- 500g lean beef mince
- 1 onion, finely chopped
- 2 tablespoons curry powder
- 4 tomatoes, chopped
- 2 carrots, sliced
- 4 cups mushrooms, sliced
- 1 1/2 cups reduced-salt beef stock
- 400g can chickpeas, rinsed, drained
- 2 cups cooked rice, to serve

Instructions and steps:
Step 1 Spray a large frying pan with oil and place over medium-high heat. Add mince and cook, stirring with a wooden spoon to break it up, for 5–7 minutes until browned. Add onion and cook for 3–4 more minutes.
Step 2 Add curry powder, tomato, carrot and mushrooms. Cook for 5 minutes, stirring occasionally.
Step 3 Add stock and chickpeas to pan. Bring to the boil. Reduce heat and simmer, uncovered, for 15 minutes. Serve with rice.
Use whatever vegies you have in the fridge. Capsicum, zucchini and shredded cabbage are all delicious.
