Full ingredients list:
- 1 teaspoon sesame oil
- 100g beef fillet, cut into thin strips
- 1 clove garlic, crushed
- 1/2 red onion, cut into wedges
- 1 cup snow peas
- 1/2 bunch broccolini
- 1 tablespoon chilli jam
- 1 tablespoon reduced-salt soy sauce
- 10 unsalted cashews
- 1 Sun Rice Quick Cup white rice

Instructions and steps:
Step 1 Add half the oil to a wok or frying pan and place over high heat. Add beef and stir-fry for 2 minutes, until lightly browned. Transfer beef to a plate.
Step 2 Add remaining oil to pan. Add garlic and onion. Stir-fry for 2–3 minutes, until onion is softened.
Step 3 Add snow peas and broccolini, stirring for 2 minutes. Return beef to wok and add chilli jam and soy sauce. Cook, stirring, for 2 minutes, then add cashews.
Step 4 Meanwhile, microwave rice according to packet instructions. Serve stir-fry over rice.
