Ham, potato and feta frittata

Full ingredients list:
400g potatoes, sliced lengthways
2 teaspoons olive oil
100g shaved lean ham, chopped
1 red onion, sliced
130g fresh baby spinach
200ml skim milk
1 fresh chilli, seeded, chopped
1 handful parsley, chopped
80g reduced-fat feta, cubed

Instructions and steps:
Step 1 Preheat oven to 200°C. Place potatoes, oil and half the ham into a large quiche tin. Toss to coat. Roast for 30 minutes.
Step 2 Meanwhile, spray a frying pan with oil and cook onion until transparent. Remove potatoes from oven. Add spinach, remaining ham and cooked onion to potatoes. In a bowl, whisk together eggs, milk, chilli and parsley. Pour mixture over potatoes. Sprinkle with feta.
Step 3 Bake for 15–20 minutes, until egg is set and top is golden.
