Full ingredients list:
- 500g kangaroo mince
- 1/2 onion, finely chopped
- 1 orange, zested
- 1/2 cup breadcrumbs
- 1 teaspoon Tuscan seasoning
- 2 tablespoons chopped fresh parsley
- 4 wholemeal pita breads
- 4 cups lettuce
- 4 teaspoons beetroot or tomato relish
- 4 tablespoons low-fat natural yoghurt

Instructions and steps:
Step 1 Place mince in a bowl with onion, orange zest, breadcrumbs, seasoning and parsley. Using your hands, mix ingredients well. Shape into 4 patties.
Step 2 Preheat barbecue or chargrill pan to high. Cook burgers for 6 minutes each side, or until done to your liking. Slice pita breads horizontally. To assemble burger, layer lettuce, patty, tomato relish and yoghurt in pita bread.
Swap the kangaroo mince for turkey mince or TVP (textured vegetable protein). Top burgers with roasted capsicum.
Make a double batch of burgers and freeze half the patties after step 1 to use later.
