Full ingredients list:
- 100g purchased sponge cake, cut into small cubes
- 250g frozen mixed berries
- 1 tablespoon caster sugar
- 4 scoops low-fat vanilla ice-cream

Instructions and steps:
Step 1 Divide sponge cake between 4 serving bowls.
Step 2 Place berries, sugar and 2 tablespoons water into a medium saucepan over medium-high heat. Simmer for 3–4 minutes, until berries are warmed through.
Step 3 Spoon some of the berry juice over the sponge cake. Top with a scoop of ice-cream, then spoon over the warm berries. Serve immediately.
Make it dairy free: Use vanilla soy milk ice-cream.
