Full ingredients list:
- 1 red capsicum
- 1 cup low-fat cottage cheese
- 100g reduced-fat feta, crumbled
- ground black pepper

Instructions and steps:
Step 1 Preheat oven to 200ºC. Roast whole capsicum until soft, about 20 minutes. Remove from oven, cool, then remove skin and seeds and chop roughly.
Step 2 Combine cottage cheese, feta and capsicum in a blender or food processor and blend until smooth. Season with pepper.

To save time, you can use 1/2 cup jarred pre-roasted capsicum instead of roasting your own.
Serve with raw vegie sticks or spiced pita chips. Slice pieces of pita bread into triangles, lightly spray with oil and sprinkle with paprika and oregano. Place under a pre-heated grill for 2 minutes, until crispy.
