Full ingredients list:
- 1 onion, chopped
- 1 stalk celery, chopped
- 50g pistachios
- 75g dried apricots
- 3 tablespoons chopped parsley
- 75g breadcrumbs
- 2 lean sausages, casing removed
- 1 egg
- 1 lemon, zested

Instructions and steps:
Step 1 Preheat oven to 180°C. Line a loaf tin with baking paper.
Step 2 Place onion and celery into a food processor and process until finely chopped. Add pistachios, apricots and parsley and process.
Step 3 Transfer to a large bowl and add breadcrumbs, sausage and egg. With clean hands, mix until well combined. Season with ground black pepper.
Step 4 Spoon mixture into loaf tin and level surface. Place tin in an ovenproof dish and fill with enough water to rise a quarter of the way up the sides of tin. Bake for 25–30 minutes, until firm.
Step 5 Cool slightly in tin before turning out. Garnish stuffing with lemon zest and serve with your favourite roast meat and roast vegies or salad.
You can replace the pistachios and dried apricots with walnuts and dried cherries.
