Full ingredients list:
- 2 teaspoons gelatine
- 1 tablespoon water (or creamy liqueur, such as Baileys)
- 1 cup skim milk
- 1/2 cup caster sugar
- 2 eggs, separated
- 50g 70% cocoa dark chocolate, finely chopped
- pinch salt
- shaved dark chocolate, to serve

Instructions and steps:
Step 1 In a small bowl, sprinkle gelatine over water or liqueur. Whisk with a fork until combined and let stand until dissolved.
Step 2 Meanwhile, place milk into a small saucepan over medium-low heat. Bring to a gentle simmer (do not boil).
Step 3 Using electric beaters or whisk, mix egg yolks and 1/4 cup sugar for 3 minutes, until thick and creamy. While whisking, slowly add hot milk until well combined. Transfer mixture to a saucepan over medium-low heat. Stir with a wooden spoon until mixture is hot and slightly thickened. Remove from heat, add gelatine mixture and chocolate. Stir until well combined. Set aside to cool.
Step 4 Meanwhile, using electric beaters, beat egg whites, 1/4 cup sugar and salt until thick and glossy. Gently fold egg white mixture into chocolate mixture in two batches. Spoon into 4 x 3/4 cup-capacity dishes. Chill for 3 hours, or until set. Garnish with shaved chocolate.
Make it gluten free: Use gluten-free chocolate.
