Full ingredients list:
- 2 green onions, chopped
- 400g cannellini beans, rinsed
- 3 cups frozen vegetables (we used corn, cauliflower, peas, broccoli and carrots), thawed, drained
- 8 large eggs
- 200ml skim milk
- 4 slices multigrain toast

Instructions and steps:
Step 1 Preheat oven to 180°C. Line a shallow baking dish (about 20cm in diameter) with baking paper. Combine onion, cannellini beans and thawed vegetables in prepared baking dish.
Step 2 Break eggs into a large bowl. Beat eggs with a fork, then add milk and stir to combine.
Step 3 Pour egg mixture over vegetables in baking dish. Bake for 40 minutes, or until set and golden brown on top. Serve with toast.
Make it gluten free: Serve with gluten-free bread.
