Step 1 Spray a large frying pan with oil and place over medium-low heat. Add onion, carrot, celery and mushrooms. Cook, stirring occasionally, for 6–7 minutes, until vegetables are soft. Add chilli powder and cook, stirring, for 1–2 minutes, or until fragrant.
Step 2 Add mince and cook, using a wooden spoon to break up mince, for 5 minutes, or until mince is browned. Add tomato paste, stirring for 2 minutes, then add tomatoes and 1/2 cup water. Stir to combine.
Step 3 Add kidney beans and bring mixture to the boil. Reduce heat to very low and simmer, stirring frequently, for 10 minutes or until thick. Ladle chilli beef and beans into bowls and garnish each with coriander and 1 tablespoon yoghurt. Serve over rice and steamed green beans.
