Stir-fried curried beef with noodles and basil

Full ingredients list:
- 200g fresh egg noodles (from the fridge section)
- 350g lean beef mince
- 2 teaspoons curry powder
- 1 bunch green onions, chopped
- 3 cloves garlic, crushed
- 2 medium red capsicums, deseeded, sliced
- 2 cups green beans, trimmed, cut into thirds
- 1/2 cup Thai basil leaves
- lemon wedges, to serve
- 1/2 cup reduced-salt beef stock
- 1 1/2 tablespoons reduced-salt soy sauce
- 1 tablespoon brown sugar

Instructions and steps:
Step 1 Place noodles into a bowl and cover with boiling water. Stand for 2 minutes, drain well and shake dry. Set aside.
Step 2 Spray a wok or large frying pan with oil and place over a high heat. Add mince and curry powder and stir-fry for 3–4 minutes, until beef is browned. Remove from pan.
Step 3 Spray pan with a little more oil and stir-fry onion, garlic, capsicum and beans over medium heat for 3–4 minutes, until softened, adding 1 tablespoon water to the pan to steam the vegetables.
Step 4 Meanwhile, combine all sauce ingredients in a small bowl.
Step 5 Add noodles, beef and sauce to the wok and simmer for a further 2 minutes, until heated through. Stir in basil and serve immediately with lemon wedges.
You can double the serve of vegies in this dish for a bigger meal that's still low-kJ.
