- Simple chicken casserole base recipe
- 1 tablespoon chilli powder
- 400g can chickpeas, rinsed, drained
- 2 tablespoons mango chutney
- 4 tablespoons sultanas
- 4 cups cooked brown rice
- chopped coriander, to serve

Instructions and steps:
Step 1 Place casserole, chilli powder, chickpeas and mango chutney into a large saucepan over medium heat. Stir well and simmer for 10–15 minutes, until warmed through.
Step 2 Stir through sultanas. Serve with brown rice and garnish with coriander.

Add frozen peas and green beans before reheating casserole for more flavour. You can tone down the heat by using Moroccan spice, instead of chilli powder.
