Step 1 Heat oil in a large frying pan over high heat and cook onion until softened. Add chicken and cook until browned.
Step 2 Add remaining ingredients and bring to the boil. Reduce heat to low, cover and simmer for 35 minutes. Season to taste and garnish with parsley, if desired.
