Lemon prawns with spinach rice

Full ingredients list:
- 600g green prawns, peeled
- 1/2 tablespoon olive oil
- 1 teaspoon grated lemon zest
- 3 cloves garlic, crushed
- 250g packet frozen chopped spinach, defrosted, drained
- 450g packet microwaveable brown rice
- 2 teaspoons ground cumin
- 1/3 cup lemon juice
- 4 cups steamed green vegies

Instructions and steps:
Step 1 Pat prawns dry and place into a medium bowl. Gently toss with oil, lemon zest and garlic.
Step 2 Cook spinach according to packet instructions. Cook brown rice in microwave according to packet instructions. Fold cumin and spinach through rice.
Step 3 Meanwhile, place a large frying pan over medium-high heat. Cook prawn mixture in two batches for 2–3 minutes, turning occasionally, until cooked. Return all prawns to pan. Add lemon juice and reduce slightly (1 minute), stirring. Serve prawns with juice, rice and steamed green vegies.
Omit the lemon juice and zest and replace with 1/2 tablespoon Indian curry paste. Chicken can be used in place of prawns, too.
