- 200g pre-made sponge cake
- 2 tablespoons cocoa
- 2 tablespoons icing sugar
- 1 cup low-fat ricotta
- 200g tub fat-free vanilla yoghurt
- 1 tablespoon cocoa

Instructions and steps:
Step 1 Slice sponge cake into 3 horizontal slabs using a large serrated knife. In a bowl, dissolve cocoa in 2 tablespoons boiling water. Add icing sugar, ricotta and yoghurt and beat until well combined.
Step 2 Place bottom layer of sponge cake on a large plate. Spread with half the ricotta mixture. Top with another layer of sponge and spread with remaining ricotta mixture. Finish with top layer of sponge.
Step 3 Make icing: combine cocoa and icing sugar in a small bowl. Add 1–2 tablespoons hot water while stirring. Pour icing over top of cake and smooth with a spatula or flat palette knife. If desired, serve with berries and a dollop of low-fat yoghurt.
