Full ingredients list:
- 1 medium potato
- 1 small rasher rindless bacon, chopped
- 1/2 x 400g can mixed beans, drained, rinsed
- 1 green onion, chopped
- 3 tablespoons salsa
- 2 tablespoons low-fat sour cream
- chopped fresh parsley, to serve

Instructions and steps:
Step 1 Preheat oven to 220ºC. Poke several holes into potato with a fork, wrap in foil and bake for 45 minutes. Alternatively, microwave on HIGH for 5–7 minutes. Transfer to a serving plate when slightly cooled.
Step 2 Pan-fry bacon until crispy. Add beans, onion and salsa to pan, stir to combine and heat through. Slice open potato and top with bacon mixture. Garnish with sour cream and parsley.
